🍋 Lemon Cake 🍋

225g butter, soft and unsalted
225g caster sugar
4 large eggs
225g self raising flour
2 lemons (zested & juiced)
Lemon Drizzle:
100g caster sugar
Lemon Juice (2 lemons)
Method
1. Preheat oven to 170 degrees Celcius
2. Cream butter and sugar together using either a whisk or a mixer. (medium 5 minutes)
3. Butter the baking tin (bottom and sides).
4. Zest the lemons using a fine grater.
5. Place the eggs into the mix and add the lemon zest right before the last egg.
6. Add the self-raising flour by passing it through a sieve. Fold the mixture slowly in a circular motion until the mix becomes smooth and consistent.
7. Place the mixture into the baking tin and level out. Place in the oven for 45-55mins until a skewer comes out clean.
8. Squeeze the lemon juice out of the lemons and add the caster sugar and mix to get a smooth drizzle.
9. When done, poke the lemon cake using a skewer all around and drizzle the lemon juice mix all around the cake and leave to rest for around 10mins.
