🌶Stuffed Peppers🌶

Ingredients

Up to 6 servings:
3 coloured peppers
4 tbsp olive oil
1 onion, chopped
1 garlic clove
1/2 cup white rice (cooked)
30g quinoa
2 tbsp mint, chopped
2 tbsp parsley, chopped
2 tbsp black raisins (any raisins)
Salt & pepper
Chopped mixed fresh herbs

Method

1. Boil the rice in a pot and the quinoa in the microwave in some hot water.
2. Half the peppers and scoop out the seeds. Brush peppers with oil, and cook on a medium grill (using a grill rack) for 15-20 minutes (we used the BBQ) and season with salt and pepper.
3. Fry the onions in the remaining oil for 5 minutes. Add the crushed garlic to the pan and fry for a few minutes.
4. Remove pan from the heat and mix in the rice, mint, parsley, quinoa and raisins. Add some more salt & pepper and place the mixture into the peppers.
5. Cook on the grill again for 15 minutes & you’re done!

This recipe is also #vegan & #vegetarian! We got our peppers from @bint.lirjieh! They’re pesticide free & super delicious too!
