Chocolate Oat Cookies
Total time: 30 minutesIngredients (Makes 10 cookies)
50 g Rolled oats
1/2 tsp Bicarbonate of soda
2 cubes Lamb Brand Dark Chocolate
50 g Golden caster sugar
25 g brown sugar
25 g Plain flour
4 tbsp honey
65 g Wholemeal flour
50 ml Vegetable oil
1 tbsp Water
Method
1. Pre-heat the oven to 160°C.
2. Mix the rolled oats, flours and sugars with a pinch of salt in a mixing bowl.
3. Mix 2 table spoons of the honey and the oil in a bowl annd microwave on high for 1 minute. Then mix again
4. Mix the bicarbonate of soda and boiling water in a bowl, pour into the warm oil and honey mix.
5. Pour over the dry ingredients and mix to form a dough. Add the remaining 2 tablespoons of honey and mix again to create small sized balls.
6. Space them apart on the prepared baking trays and flatten slightly with a teaspoon. Bake for 10-12 minutes until golden brown.
7. Remove from the oven and leave on the baking trays for 5 minutes to firm up.
8. Once cooled, spoon a little melted dark chocolate over each biscuit and spread it with the back of a spoon.
