Strawberry Vanilla Cake

Strawberry Vanilla Sponge Cake
Ingredients:
Lamb brand Sponge Cake mix
3 eggs
150 ml water
For the buttercream:
1. 100g Lamb Brand icing sugar
2. 250g Butter
3. 75g-100g of Strawberry Jam
4. 1 drop of Red food colouring
5. 2 cubes of Lamb Brand White Chocolate
Method
1. For the sponge cake mix follow the recipe at the back of the box. We used a stand mixer and a 20cm tin.
2. For the buttercream: using a stand mixer/hand mixer we blend 1/2 the icing sugar & the butter until fluffy & no lumps on high.
3. Add in the jam & food colouring and blend again on medium to high for 3 minutes. Add in the rest of the icing sugar & the white chocolate. Blend for 2 minutes until blended well.
4. We cut the cake in half and spread the buttercream in the middle & top of the cake, topped with some more melted chocolate & sprinkles (optional)! Get ready to enjoy your super fluffy & delicious cake🤩
